Oatmeal Cocount Almond Cookies with Flax, Chia and Hemp seeds

They are supereasy to prepare and you can enjoy in them in just 20 min! πŸ˜‰

Even if you’re not so into “healthy” food, I assure you that you’ll like this!

Crispy from outside, soft from inside. :*

 

Recipe:

1/2 cup almond paste

1/2 cup Encian organic coconut oil

1 1/2 cup Encian light muscovado unrefined brown sugar

2 teaspoons vanilla

1 Tbsp coconut syrup

3 Tbsp soy milk with chocolate

1 teaspoon apple cider vinegar

1 cup Encian organic rice flour

1/2 cup plain flour

1 cup oatmeal

1 teaspoon baking powder

1 teaspoon Encian baking soda

1/2 teaspoon Enican himalayan salt

1 Tbsp Enican organic chia seeds

1 Tbsp Encian organic shelled hemp seeds

1 Tbsp flax seeds

 

Procedure:

Heat your oven to 180 C

In a bowl combine the almond paste, coconut oil, sugar and vanilla

In a separate bowl combine flex seeds, coconut syrup and soy milk

Add the vinegar, and pour into the almond mixture, stir well

In a separate bowl mix the dry ingredients: flour, oatmeal, baking soda, baking powder and salt, stir until combined

Add chia, hemp and flax seeds, and stir all together well

Now stir togehter the dry and wet ingredients

Make 3 cm balls, press every each little and placed them on a baking pan

Bake for 10-12 min

Live them to cool a little
